No two evenings in St Barths are the same. One night calls for a long, elegant dinner; the next for a relaxed meal with bare feet and a view of the sea. That is why we think about private dining in formats, not fixed menus.
Here are the five experiences our chefs bring to villas and yachts across the island, and the moments each one suits best.
Tasting Menu
The most refined way to dine at home. A sequence of small, precise courses, each built around a single idea or ingredient, served at the table one after another.
A tasting menu suits a special occasion: an anniversary, a milestone birthday or the last night of a trip. It works beautifully with wine pairings, and it lets a chef show the full range of their craft.
Best for: celebrations, intimate dinners, guests who love fine dining.
Sharing Table
Generous platters and bowls placed in the middle of the table, for everyone to pass and share. The atmosphere is warm and informal, but the cooking is no less careful.
The sharing table is the natural choice for families and groups of friends, and for long dinners where conversation matters as much as the food.
Best for: families, larger groups, relaxed evenings.
Omakase
Omakase means "I leave it to you" in Japanese. The chef chooses each course on the day, guided by the best ingredients available and the mood of the table. Raw fish, delicate broths and precise knife work often sit at its heart.
Made with the best fish available locally, omakase is a particularly memorable way to taste the island.
Best for: adventurous diners, seafood lovers, smaller groups.
Fire & Sea
Cooking over live fire is one of the oldest pleasures of island life. Whole fish, lobster, meats and vegetables are grilled over flame and served with bright sauces, salads and island sides.
Fire & Sea suits beach lunches, poolside evenings and, where the yacht allows open-flame cooking safely, dinners on deck. It is lively, sociable and full of flavour.
Best for: outdoor dining, beach days, sunset gatherings.
Fresh & Light
Vibrant, seasonal cooking for warm days: raw and lightly cooked dishes, salads, fruit and herbs. It is ideal for guests who want to eat well without feeling heavy, or who follow particular dietary preferences.
Best for: lunches, wellness-focused stays, hot afternoons.
Mix them through your stay
Most guests combine formats over a week: a Fresh & Light lunch by the pool, a Fire & Sea evening on the beach, a sharing table with the whole family, and a tasting menu to close the trip.
Your chef will help you plan the rhythm, so every meal feels right for its moment.
Find your format
Every Chef's Barth chef is personally vetted by our founder, Luigi Fumarola, who brings more than 20 years of experience in Michelin-starred kitchens and aboard superyachts. Tell us about your stay, and we will suggest the formats, and the chef, that fit it best.
